Southern Sweet Potato Casserole
3 cups mashed peeled sweet potatoes (5 to 6 potatoes) boiled until soft 1 cup sugar 1/2 tsp salt 2 eggs 1/3 stick butter room temperature 1 tsp vanilla
Mix all ingredients till mushy with a mixer. Pour into a large baking dish.
Topping 1 cup coconut 1 cup brown sugar 1 cup chopped walnuts or pecans 1/3 stick of butter 1/3 cup self rising flour or flour with a touch of baking powder
Mix together and pour on top of potato mixture. Bake at 325 for 40 minutes.

Mamaw Lucille's Broccoli Casserole
2 8oz packages frozen broccoli 1 can mushroom soup 1 cup Miracle Whip salad dressing 2 eggs beaten
Mix together and pour in buttered baking dish.
Topping 1/4 cup melted butter 1 medium onion chopped fine 1 cup cheddar cheese 1 1/2 cup stuffing (Pepperidge Farm is the best)
Sprinkle topping over broccoli mixture. Bake at 350 for 40 minutes or till top is golden brown and inside is firm.

Lemoncello drinks
This stuff is orgasmic!
You need:
12 lemons 1 bottle of Everclear Pure Grain Alcohol Sun Tea Jar
Wash your lemons, then peel. You are using the peel, so make sure you don't peel so deep you get the white stuff with the peel. Put peels in sun tea jar and pour the bottle of Everclear over them. Put on cap, shake and put in a dark closet for a few weeks.
After 2-3 weeks, take a peel out and bend it. If it cracks, it's ready. If not, let is steep another week. When the peel cracks you are ready.
Now you need: 2 pints distilled water 3 cups sugar
Warm your water, add sugar. Bring to boil and boil until sugar is completely dissolved. If it doesn't completely dissolve, your drink will be gritty. After sugar is dissolved, cool water to room temp.
Now strain your alcohol thru coffee filters. Again, if you don't strain until clear, your drink will have "floaties".
Add your liquor to the sugar water and shake. I keep this in the freezer.
This is the yummiest drink....be careful though.....I've gotten pretty snockered on this......doesn't take much!

PRETZEL PARTY MIX
1 box or lg. bag pretzels 1/4 c. oil (I use butter flavored popcorn oil) Dill weed Garlic powder Basil 1 pkg. Ranch seasoning mix, dry
Break pretzels in bowl (or just place in bowl if using small pretzels). Dump oil on pretzels. Stir to coat pretzels. Sprinkle ranch dressing, dill weed, garlic powder and basil, mixing well. Bake at 350 degrees for 10 minutes or leave in covered bowl overnight. You can also heat in the microwave.
MMmmmmmmm good!

i have a famous recipe - it's called oreos and milk
1. Open 1 package oreo cookies 2. Pour 1 glass of milk 3. Eat it.
It's pretty simple...and a crowd pleaser..

Crunchy Ranch Chicken
4 servings
1/3 cup Corn Flake Crumbs 1/4 cup Reduced Fat Parmesan Cheese (Kraft or any other version) 1 pkg Hidden Valley Ranch Dressing Mix 4 boneless Chicken Breasts non-stick cooking spray
Preheat oven to 350. Spray a 9 x 13 pan with non-stick cooking spray.
Combine corn flake crumbs, cheese, dressing mix and mix with a fork. Spray the chicken with non-stick spray (can be buttered flavored), then roll in corn flake mixture to coat. Place chicken in prepared pan, and bake uncovered for 45 min. or until done.
** You can add a bit of garlic powder to the mixture.

White Christmas Martini
these are very yummy....
4 parts ocean spray white cranberry juice cocktail 1 part vodka 1 part simple syrup (recipe to follow)
that is it, just mix and enjoy!!
simple syrup : 2 cups of regular white sugar 1 cup of water let sugar/water boil for 5 minutes; cool. simple syprup can be kept in the fridge for a couple of weeks if you don't use it all up, however in my house it usually does lol!!
For decoration, take sugar in the raw and put a few drops of red food coloring and mix til sugar turns red. With a lime or lemon, go around the rim of the glass to get it wet. Then dip the glass into the colored sugar.
Fill the glass with the martini mix and as a snazzy garnish drop in 3 fresh cranberries (remember, they float!!) .
You can also make a non-alcohol version for the kiddies.

PEANUT BUTTER LUSTER PIE
CHOCOLATE LAYER ½ cup semi-sweet chocolate chips 1 tablespoon margarine or butter 2 to 3 teaspoons water ¼ cup powdered sugar
FILLING 1 cup margarine or butter (I use less) 1 cup firmly packed brown sugar 1 cup peanut butter 1 (12-oz )carton frozen whipped topping, thawed
TOPPING ½ cup semi-sweet chocolate chips 1 tablespoon margarine or butter 1 to 3 teaspoons milk 1½ teaspoons corn syrup
GARNISH 1 cup thawed frozen whipped topping 2 tablespoons chopped peanuts
Heat oven to 450 degrees. Prepare pie crust using 9 inch pie pan. Bake at 450 for 9-11 minutes. Cool completely. In small saucepan over low heat, melt ½ cup chocolate chips and 1 tablespoon margarine with 2 teaspoons water, stirring constantly until smooth. Blend in powdered sugar until smooth. Add additional water if necessary for desired spreading consistency. Spread mixture over bottom and up sides of cooled crust. Refrigerate. In medium saucepan, combine 1 cup margarine and brown sugar. Cook over medium heat until margarine or butter is melted and mixture is smooth, stirring frequently. Refrigerate 10 minutes. In large bowl, beat peanut butter and brown sugar mixture at low speed until blended. Beat 1 minute at medium-high speed. Add 12 oz. whipped topping: beat 1 additional minute at low speed or until mixture is smooth and creamy. Pour over chocolate layer. Refrigerate. In small saucepan over low heat, melt 1/2 cup chocolate chips and 1 tablespoon margarine with 2 teaspoons milk and corn syrup, stirring constantly until smooth. Add additional milk if necessary for desired spreading consistency. Spoon and gently spread topping mixture evenly over filling. Refrigerate at least 2 hours to set topping. Garnish with whipped topping and peanuts. Store in refrigerator. 10 to 12 servings.

Just have to say I made Isa's Banana Bread the other night and it was delicious! Of course I chose to make the less healthier one. So worth it though!

I'm totally diggin Wicked's Oreo recipe but I think I may modify it to the double stuff, if thats okay?? I have what I call a "fake toffee" recipe that I will post as soon as I can find it. I make it every year. I should have it memorized but I am having a senior moment. Jilly
