Thought it might be nice if we could all share in some recipes for the holidays.I love cooking and trying new recipes and I'm sure everyone on the board might have one even if it is simple. My first one is for sweet potato casserole, this is like a dessert but I get lots of requests for it at holiday time, even from the kids.It goes great with ham or turkey dinners! SWEET POTATO CASSEROLE 40 ozs canned Yams ½ cup sugar ½ cup butter 2 beaten eggs 1t vanilla 1/3 cup milk Topping: 1/3 cup butter 1 cup brown sugar ½ cup flour 1 cup chopped nuts Combine casserole ingredients with a mixer until potatoes are a bit mashed, pour into greased pan and top with the combined ingredients of topping mixture. Bake @ 350 for 45 minutes

Here is my favorite Fudge recipe and it is so easy too. I found it years ago on the side of a box of Dominos Confectioners Sugar
Dominos Southern Style Pecan Fudge
INGREDIENTS 4 cups confectioners' sugar (powdered sugar) 1/2 cup unsweetened cocoa powder 6 tablespoons butter 1/4 cup milk 1 tablespoon vanilla extract 1/4 teaspoon salt 1 cup chopped pecans (optional)
DIRECTIONS
Butter a 9x9 inch dish.
Combine sugar, cocoa, butter, milk, vanilla and salt in the top of a double boiler over simmering water. Cook, stirring, until smooth. Remove from heat and beat until mixture loses its gloss. Stir in chopped nuts and pour quickly into prepared pan. Let cool completely before cutting into squares.
If you don't have a double boiler, you can just do it in a regular pan...but watch the heat and stir it constantly to keep it from burning or sticking too bad.
